Blackberry Honey
Blackberry honey is produced by bees from the nectar of blooming wild blackberry plants. Large stands of wild blackberries are very hard to find in Tasmania these days, and Blue Hills is one of the few beekeepers that is still producing wild blackberry honey.

Genuine blackberry honey is highly sought after for its light, very delicate flavour and aroma.

Leatherwood Honey
The wild rainforests of Tasmania are the only place in the world where the rare leatherwood tree (Eucryphia lucida) grows. Often referred to as the King of Honey and the Honey of Kings, leatherwood honey’s bold, complex and unique flavour can best be described as “tasting like the rainforest”.  It has an exotic and balsamic flavour, with lightly spicy notes in its long finish. Overall, the sensation of eating this honey is very pleasurable.

Note:
Blue Hills extracts all honey using a traditional, cold extraction technique. This is to ensure that the honey retains all of its delicate flavours, aromas and natural properties. Because the honey hasn’t been heated or fine filtered, it eventually granulates (i.e. crystallises, or “candies”).  All pure, wild honey should granulate over time but never spoils. Granulated honey can be gently restored to a liquid state by placing the glass jar in a pot of hot but not boiling, water or lukewarm oven under 45 degrees Celsius
