Creamed honey contains a high concentration of small crystals, which prevents the formation of larger crystals that can occur in unprocessed honey. The process also yields honey with a smooth, spreadable consistency. Because glucose crystallizes in honey and glucose crystals are naturally pure white, creamed honey is always lighter in color than liquid honey of the same floral type.
