Blue Hills honey is extracted using a traditional, cold extraction method. This is done to preserve the honey’s delicate flavors, aromas, and natural properties. Because the honey has not been heated or finely filtered, it granulates (crystallizes, or “candies”). Pure, wild honey will granulate over time but will never spoil. Granulated honey can be gently re-liquidized by placing the glass jar in a pot of hot but not boiling water or a lukewarm oven under 45 degrees Celsius.
